Lively: What are the mistakes you've noticed people make when preparing a cup of coffee?
Paul Swanson: Storing coffee in the refrigerator. Don't do it! The coffee will absorb moisture and odors that will ruin the flavor.
L: Any unexpected tricks/tips people should be taking into account?
PS: I believe that lighter roasts are refreshing and energizing, and darker roasts are relaxing and comforting. So, try drinking light or medium roast coffee in the morning to kickstart your day.
L: What makes a great cup of coffee in your opinion?
PS: A great cup of coffee is the one you like best. Add creamer if you like it, drink it iced or sprinkle cinnamon on it. There are best practices for brewing coffee, but there’s no wrong way to drink it.

- Grind your coffee beans right before you need them.
- Grind only what you need.
- Use filtered water.
- Use a brewer that heats water to around 200ºF
- Weigh your coffee and use 55g of coffee for every liter of water.
